On June 26, 2025, the Village of Iola Board of Trustees participated in a quasi-judicial hearing to determine whether to renew the Class “B”/“Class B” Alcohol Beverage License for The Thirsty Perch, LLC and the Operator’s License for Steve Steeber. The hearing was presided over by Attorney Chuck Adams, who served in the judicial role to ensure due process and compliance with legal standards.
The Village Board approached this matter with the seriousness it deserved. Each trustee carefully reviewed all submitted materials, evaluated testimony, and fulfilled their responsibilities under the law.
During the hearing, a proposal was raised that would have removed Steve Steeber from the license and transferred ownership and licensing authority to Sherri Miller. This option was presented as a potential resolution to address the board’s concerns while allowing the business to continue operating. However, the offer was declined by the applicants.
At the conclusion of the hearing, Attorney Chuck Adams confirmed on record that the Village Board made a good-faith effort to negotiate a workable solution, and that this proposal was ultimately refused.
After the full presentation of evidence and legal considerations, the Village Board voted unanimously to deny renewal of both the Class “B”/“Class B” Alcohol Beverage License for The Thirsty Perch, LLC and the Operator’s License for Steve Steeber. This decision will take effect at the expiration of the current license term. The Village Clerk will oversee the next steps in accordance with applicable legal procedures.
For the sake of transparency, I would also like to clarify a separate matter: I am not the owner of the Crystal Café of Iola. While members of my family are involved in the business, I do not hold any ownership interest or operational control. It is important to me that the public has a clear and accurate understanding of my role, free of any perceived conflict of interest.
